Each terroir has its own specialities.
In November 2007, white asparagus from Bassano del Grappa obtained the prestigious European PDO (Protected Designation of Origin) label.
The same terroir that gives our products their distinctive characteristics also produces a type of asparagus that is white with pinkish hues and has a sweet-bitter flavour that sets it apart from all other European asparagus. It is tender, with a fresh aroma and appearance, thanks to being harvested at dawn. It is then washed, cleaned and carefully selected by hand. It is then tied with a willow sucker called a “Stroppa”, the same one that we at Cantina Zoe use to tie the vine shoots to the wire after winter pruning, as tradition dictates.
The people of Bassano, including us, are proud to show the world the most distinctive of our region’s excellences, which is rewarded and promoted every year through the Bassano DOP White Asparagus Exhibition and Competition.
On 21st April this year, the 87th exhibition was held in Piazza Libertà, hosting the various excellences of the territory such as Marostica cherries, Pove del Grappa oil, Asiago cheese… without, of course, detracting from the popularity of the king of kings: asparagus.
We had the honour of participating as the representative winery of the Bassano area, offering a perfect asparagus-wine pairing with our still white wine “La Pignara”.
